DELI'ZIUSU Nero d'Avola Rosso DOC Sicilia

A Nero D'Avola in purity, obtained from grapes conducted in organic farming. Expressive strength and refinement of tannins are the distinctive elements of this great Sicilian variety. The grapes harvested by hand undergo a preferential maceration at low temperatures, necessary for the extraction of sweet tannins and aromatic substances that characterize it. The subsequent fermentation, at 26 ° C, is constantly monitored to ensure the obtaining of the organoleptic characteristics that characterize it. Nero D'Avola Vitese is characterized by a bouquet of fruity notes and spices with floral hints of rose. A wine that has obtained many awards thanks to its pleasantness and proverbial elegance.

ENO-SENSORY ANALYSIS
COLOUR: Crystalline and intense ruby red.
BOUQUET: There are fruity hints of blackberry and cherry around which appear nuances of spices and floral notes.
TASTE: Dry and enveloping, it fills the palate with fruity notes. The tannin is soft and elegant. The finish is long and harmonious and confirms the great structure.

HOW TO TASTE IT
PAIRINGS: Aperitifs, first and second courses based on meat, platters of cold cuts and semi-aged cheeses.
RECOMMENDED GLASS: Small Ballon. SERVING TEMPERATURE: 16-18 °C.

OENOLOGICAL DATA

VINIFICATION: The harvest takes place by hand between the end of August and the first days of September. The maceration of the skins takes place at low temperatures for two days for the extraction of sweet and delicate tannins and color. Alcoholic fermentation takes place at 26° C for about 12 days.
REFINEMENT IN BOTTLE: 4 months before marketing.

The vineyards, of native varieties, extend between the hills, with an altitude between 60 and 260 meters. The vineyards have been planted in a medium-sloped soil, particularly suitable with a southern exposure, characterized by a favorable microclimate, a strong temperature range between day and night and mitigated by the winds coming from the south.
The vineyards are mainly grown on a clayey soil of marble that gives the wine particular characteristics such as structure, longevity and softness, which give the flavor complex olfactory and gustatory sensations
